Kitchen Secrets By simply knowing some of these basics you can turn ordinary into extraordinary, and have fun doing it too. 1. When matching wine to food there is really only one simple rule. Make sure the strength and flavours of the food you are eating matches the strength and flavours of the wine you are drinking. You don’t want to take a very strong wine, such as a Barolo, and try to match it with very delicate food, such as pan-seared Halibut, or vice versa. You want the flavours to marry. That means your food and wine match up in a harmonious balance, and one does not overpower the other. 2. Basics: Having the right equipment is essential to achieving the best results. You need a hot pan. You need sharp knives. And you need to season food properly. These basics will make your life in the kitchen so much easier, and your results will be so much better.
3.
A
little bit of Dijon mustard will help to hold together fussy sauces
such as hollandaise and mayonnaise
